This is the dessert you make when it’s too hot to turn on the oven.

Let vanilla ice cream or frozen yogurt soften just enough to fold in chopped cherries, then spread the mixture into a store-bought chocolate cookie crust. Pop it in the freezer for at least 2 hours, and you’ve got a creamy, cherry-studded ice cream pie with a chocolatey crunch.

Garnish with extra chopped cherries and mini chocolate chips if you’re feeling fancy.

Directions

Gently combine 3 cups of softened low-fat vanilla ice cream or frozen yogurt and cherries in a big bowl.

Transfer to a 9-inch chocolate cookie pie crust.

Garnish with chopped cherries and mini chocolate chips if desired.

Freeze until firm, at least 2 hours or until it forms into your favorite texture.
