Don't be disgusted by the name, this scrumptious casserole is made with rice, cheddar cheese and succulent ground beef.

So it had been over 2 years since being diagnosed with Celiac Disease and I still hadn't had any homemade banana pudding. Thanks to vitacost.com and their awesome gf selection I found some yummy vanilla wafers that were gluten free (Kinnickki brand). Of course my longing needed to be rich, creamy and worth the long wait lol. So here is the deliciousness! I think the cream cheese makes it better than any I've ever tried before.
