Lemon Chicken Asparagus
Lemon Chicken Asparagus

Chicken breast turned out juicy, made my own seasoned bread crumbs by toasting some bread and using a food processor adding some Italian seasoning, salt and pepper, turned out a bit dark but awfully tasty. I used speck, a smoked prosciutto instead of the turkey ham and the flavors matched up well. I made a sauce by deglazing the pan with a bit of white wine. Overall a nice combination and quite easy to make.

Zucchini Quiche Cups
Zucchini Quiche Cups

Quiche cups are about the easiest, quickest, most portable paleo dish out there. And I can’t get enough. These bacon, apple, and kale cups are scrumdiddlyumptious, and the pear and ginger ones are pretty good too. I suppose it depends on your palette. Ginger is not my flavor of choice. Lesson learned. These zucchini cups have, oh…3 ingredients. Plus salt and pepper. Plus they’re Portable, Paleo and Parent-approved. It’s a trifecta of Pleasant Perfection (or healthy Progress).

Gluten-Free Hot Cross Buns
Gluten-Free Hot Cross Buns

We all know that Hot Cross Buns are associated with marking the end of Lent, so we’ve made a gluten-free option that everyone can enjoy. There is an aBUNdance of antioxidants in the raisins, and also, in the cinnamon which has been used medically for thousands of years. Just in case … the cinnamon spice represents the spices used for the anointing of Jesus’ body for burial and the cross symbolises the crucifixion. Happy Easter enjoying this significant treat.

If you love the classic pub snack ‘scotch eggs’ then these delicious, healthy alternatives are not to be missed. We’ve created them using lean turkey mince and coated in ground almonds instead of breadcrumbs to create a nutritious snack that saves on calories. When boiling the eggs don’t be tempted to leave for longer than 5 minutes. This is just enough time to cook the whites and the eggs will cook further when they are in the oven.

Steak with Beetroot Mash
Steak with Beetroot Mash

On our recent trip to Bali we ate at the most amazing restaurant, called Indus, which is in Ubud. It has a fantastic view of the Tjampuhan river and surrounding hills and the food is incredible. This steak and beet mash recipe is partially inspired by a meal we ate at Indus (Tunisian Salad on a bed of Beetroot Mash). We’d never had beetroot mash before and it was incredible so we’ve not even been home a week yet and have already experimented to find the perfect healthy recipe.

New York Lobster Newburg
New York Lobster Newburg

"Lobster Newberg. Also "lobster a la Newburg"...The dish was made famous at Delmonico's Restaurant in New York in 1876 when the recipe was brought to chef Charles Ranhofer by a West Indies sea captain named Ben Wenberg. It was an immediate hit, especially for after-theater suppers, and owner Charles Delmonico honored the capatain by naming the dish "lobster a la Wenberg." But later Wenberg and Delmonico had a falling-out, and the restauranteur took the dish off the menu, restoring it only by popular demand by renaming it "lobster a la Newberg," reversing the first three letters of the captain's name.
