Don’t skip the soak. Letting the millet sit in its cooking water for several hours softens the grain, shortens the simmer, and makes it easier to digest.
Simmer it low and slow with the diced turnips until both are completely tender. A heat deflector under the pot helps here, keeping the bottom from scorching during the long, gentle cook.
Then mash. A potato masher and a splash of extra water bring it to a smooth, fluffy, mashed-potato consistency. Scoop it into bowls and top with your favorite gravy for a hearty, wholesome side or meatless main.
