Two Onions, Pineapple and Olive Flatbread

Quick-easy to make, and it tastes delicious. This is a dairy-free flatbread, garlic-infused olive oil is brushed over the bread dough and topped with onions, bell peppers, olives and pineapples that are being seasoned.

1 pound pizza dough
store-bought or homemade, enough for 2 people, or as needed
4 tablespoons olive oil
with garlic and infused at low for 5 to 10 minutes
¼ cup sundried tomatoes
sliced or chopped, oil-packed and partially drained
2 each mushrooms, button
sliced, or cremini
½ each green bell peppers
slice into 1/4-inch thick
¼ each red onion
thinly slcied
¼ each yellow onion
thinly sliced
¼ cup pineapple
cut into small chunks
3 tablespoons kalamata olives
pitted and sliced
1 clove garlic
1 x salt and black pepper
to taste
1 x olive oil
for drizzling


Preheat the oven to 450 F degree.

Roll the pizza dough or bread dough into a 12-inch circle.

Place the dough onto a pizza pan that's sprinkled with cornmeal.

In a bowl, mix together all the topping ingredients.

Drizzle about 2 tablespoons of olive oil, season with salt and black pepper to taste.

Toss until evenly coated.

Brush the garlic-infused olive oil evenly over the dough.

Place the topping ingredients on top, and spread to cover the dough evenly.

Bake until the shell is golden brown and the cheese is melted, about 15 minutes.

Cool slightly and serve warm.

Too lazy to cook, this flatbread is the food to make. It was so easy and simple, and it tasted delicious. The garlic-infused olive oil really added tons of yummy flavor, the topping ingredients were tossed with olive oil and seasoned with salt and black pepper.

Loved the aroma during the baking, and it filled up the whole kitchen. Feel free to use store-bought bread dough or pizza dough, and of course if you can not leave the cheese behind, sprinkle some mozzarella or cheddar over the olive oil before placing the toppings on.
