Ingredients

1 ¼ cups yogurt, plain
low-fat
¼ cup ricotta cheese
part-skim
2 cups strawberries
frozen, no sugar added

1 teaspoon vanilla extract
pure
1 tablespoon orange juice
concentrate, frozen
1 x strawberries
for garnish

1 x mint sprigs
for garnish

Directions

In a blender or a food proccessor fitted with metal blade, place yogurt, ricotta, strawberries, vanilla and orange juice; process until smooth.

Spoon into parfait glasses and garnish with berries and a mint sprig, if disired.

Serve at once.
