This one-dish sausage and cabbage casserole comes together entirely in the microwave, which means dinner on the table in roughly 20 minutes with just one dish to clean. Bulk breakfast sausage gets crumbled and cooked with onion first, then chunked cabbage, whole canned tomatoes, oregano, and a pinch of sugar go in for a second round.

The sugar isn’t there to make it sweet. It balances the acidity of the tomatoes and rounds out the savory pork flavor. Just a tablespoon takes the sharp edge off without anyone noticing it’s there.

A flour and water slurry stirred in at the end thickens the juices into a light gravy that coats the cabbage and sausage. Without it, the casserole would be more like a soup than a proper one-dish meal.

Directions

Crumble sausage into a deep, 3-quart, heat-resistant, non- metallic casserole and add onion.

Heat, uncovered, in Microwave Oven 7 minutes or until sausage is cooked and onions are tender.

Stir freequently.

Drain off excess fat.

Add cabbage, tomatoes, sugar, oregano, salt and pepper.

Stir to combine.

Heat, covered, in Microwave Oven 8 to 10 minutes or until cabbage is tender.

In a small cup mix flour and water until smooth.

Gradually stir flour mixture into sausage mixture.

Heat, uncovered, in Microwave Oven 3 minutes, stirring frequently until thickened.
