Chinese-style stir-fried salad greens with lettuce, cucumber, tomatoes, and bell pepper wok-tossed with garlic, vinegar, and sugar until just wilted.

Garlic sizzles in smoking-hot oil, then sliced cucumber, bell pepper, tomato wedges, and broken lettuce leaves go in fast and get tossed with vinegar and sugar until the greens are just soft enough to drape over a fork but still have some backbone.
This is a great way to use the tough outer leaves of a lettuce head that you’d normally toss. The high heat of the wok softens them in seconds, and the sweet-sour dressing of vinegar and sugar gives them actual flavor instead of just being “the green stuff” on the plate.
Speed is everything. Each ingredient gets about a minute of stir-frying before the next one goes in. If you slow down, the vegetables release too much water and you end up steaming instead of frying.
Pro Tips
- Get the oil smoking hot before adding the garlic. A lukewarm wok won’t give you the quick sear you need.
- Add the lettuce last with the tomatoes. It wilts fastest and needs the least heat.
- The vinegar and sugar go in at the end. Adding vinegar too early evaporates the acid and you lose the tang.

- Add a splash of soy sauce with the vinegar for a more savory, umami-forward dressing.
- Toss in bean sprouts or shredded cabbage for extra crunch and bulk.
- Use rice vinegar instead of regular vinegar for a milder, rounder acidity.

Directions
Prepare and assemble all ingredients.
Place oil in wok and heat to smoking point.
Stir fry garlic in it, 1 minute.
Add cucumber and pepper, stir fry 1 minute.
Add tomatoes, lettuce, stir fry another minute.
Then add salt, winegar, and sugar.
Stir fry all ingredients for another 3 minutes, until lettuce leaves are wilted.
NOTE: The outer leaves of a lettuce can be used for this dish, instead of being discarded. This dish can be served in lieu of a tossed salad.
