Quick Spring Pizza
Don't have pizza dough, not a problem, use store-bought wraps. We can still make freshly baked and delicious pizza!
Ingredients

flour tortillas (8 inch)
prefer whole wheat |

tomato sauce
store-bought or homemade |

2 | ounces |
mozzarella cheese
shredded and divided about 1/2 cup |

green bell peppers
sliced |

½ | cup |
broccoli florets
|

¼ | each |
red onion
sliced |

2 | each |
mushrooms
sliced |
|
1 | small |
roasted red bell peppers
sliced |
|
¼ | cup |
artichoke hearts
marinated and drained, sliced |

Directions
Preheat oven to 425 degree F.
Place the tortillas on a baking sheet.
Put two tablespoons of tomato sauce on each of the tortilla, and spread sauce evenly.
Sprinkle 1 tablespoon of the cheese on each tortilla over the tomato sauce.
Randomly place all the sliced vegetables to cover up the tortilla.
Sprinkle the remaining cheese over the vegetables on each pizza.
If you are using unsalted tomato sauce, sprinkle some salt over.
Bake for 10 to 12 minutes until cheese is melted, and the edges of the vegetables start to turn into brown.
Transfer onto the plate, slice and serve warm.

Using tortillas is a brilliant idea... always wanted to make pizza but have heard horror stories about how difficult it is to get the dough right. Thanks for the tip.
