Directions

  1. Preheat oven to 375℉ (190℃), adjust rack to upper-middle position. Spray a 13x9-inch (32 by 23 cm) inch baking dish with non-stick cooking spray.

  2. In a bowl, whisk together the flour, baking powder, salt, pepper, and cayenne. Add the chicken stock and eggs. Whisk until smooth. Stir in spinach, shredded mozzarella cheese, onion, pepperoni slices, and garlic until combined. Transfer mixture to the baking dish and top with Parmesan cheese.

  3. Bake until bubbly and beginning to brown on top around edges, 40 to 45 minutes. Remove from oven and cool in the pan for about 20 minutes before cutting into 24 equal squares and serving warm.
