Instead of cheddar and mayo, the spread starts with tofu blended with oil, apple cider vinegar, and seasoning into a creamy base that mimics mayo. A second pound of crumbled tofu folds in for the chunky-creamy texture pimiento cheese is famous for.

The sweet pickle relish is the unexpected hero. It brings a tangy-sweet pop that cuts through the tofu’s neutrality and adds the kind of flavor punch that makes sandwich spreads worth eating. Chopped pimientos lend the signature red flecks and mild, sweet pepper warmth.
