Who invented green bean casserole?

A woman named Dorcas Reilly, who worked in the test kitchen of the Campbell Soup Company in 1955, created the original recipe.

The dish was initially called "Green Bean Bake" and was designed to be a simple and easy-to-make side dish that utilized common ingredients found in most kitchens.

Directions

Preheat oven to 350℉ (180℃).

In a medium bowl, combine beans, milk, soup, pepper, and ½ can of onions.

Pour into 1½ quart casserole.

Bake, uncovered, at 350℉ (180℃) F for 30 minutes or until heated through.

Top with remaining onions; bake uncovered for 5 minutes or until onions are golden brown.

Didn’t the original recipe dress the dish with 2 tablespoons of pimiento along the edge of the dish?

I doubled the recipe with cream of chicken instead of mushroom and 14.5 oz cans of green beans (so a 3 oz difference) and it is WAY WAY WAY too soupy. “1 can” should not be a measurement for soup. ☹️ This probably would have been fine had I doubled the recipe and left out the second can of cream of chicken…

I'm old enough to have the original Durkee's recipe that came on the French onion bag. No cheese. No Worcestershire sauce. No pimento. It doesn't specify which style canned green beans you use. You may enjoy adding other ingredients but they're not in the ORIGINAL recipe. RecipeLand has it correct!

Jody, you are absolutely correct. I've been making this since I was a teenager in the 70's. Durkee's was the recipe my family used and there was no cheese, pimento or Worcestershire sauce listed on the recipe printed on the can of dried onions. There are a million versions out there, but Durkee only had canned green beans, mushroom soup, milk, ground pepper and of course, the dried onions.

Can it be frozen straight from oven?

You will want to allow it to cool and, ideally, refrigerate before freezing. After it's cool, wrap it with plastic wrap followed by aluminum foil to prevent freezer burn.

Thaw overnight in the refrigerator before putting it back into the oven to heat through.
