Ingredients

For the salad:
2 each beets
steamed until a fork easily goes in it, about an hour, peeled, sliced into strips

4 cups mixed salad greens
fresh - rinsed, patted dry with a paper towel

1 x goat (chevre) cheese
as needed

1 x walnuts
chopped, as needed, optional

For the dressing:
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
1 x salt and black pepper
as needed

Directions

Mixed green leaves, a few beet juliennes, some crumbled goat cheese, garnish with chopped walnuts.

Use a vinaigrette salad dressing.

We love beets and goat cheese, they were perfect combination together. And this simple dressing was so tasty, giving lots of flavor into the salad. We have been making this salad for several times, and alway love it!
