Mincemeat Bars (Robb's)


Sorry, this recipe doesn't work. I really wanted it to! I'm thinking the flour or oats amount is not high enough. 1 1/4 c flour? 1 1/2 c oats? As it stands, I ended up with an overly molasses laden dough, floating in a layer of fat, with delicious mincemeat filling underneath. Not attractive, and not edible either.













Low Fat, Fat-Free, Low in Saturated Fat, Low Cholesterol, Cholesterol-Free, Trans-fat Free, Sodium-Free, Low Sodium


¾ cup water
1 package mincemeat
9 ounces, condensed
¾ cup vegetable shortening
½ cup sugar
cup molasses
¼ cup all-purpose flour
½ cup rolled oats
1 x powdered sugar


For filling, in a saucepan bring water to boiling.

Add mincemeat; reduce heat.

Cover and simmer for 3 minutes, stirring often.


In a large bowl beat shortening with an electric mixer on medium speed for 30 seconds.

Gradually add granulated sugar, beating until fluffy.

Beat in molasses.

Add flour; beat until combined.

Use a wooden spoon to stir in oats.

Press one/half of the oatmeal mixture onto the bottom of a greased 9x9x2-inch baking pan.

Spread mincemeat filling onto oatmeal mixture.

Drop remaining mixture by teaspoonsfuls onto filling.

Bake in a 350℉ (180℃) oven F for 35 minutes or until light brown.

Cool in the pan on a wire rack.

If desired, sprinkle with powdered sugar.

Cut into diamonds or bars.
