Old-fashioned honey drop cookies with cinnamon, cloves, and raisins. No refined sugar at all. Soft, chewy, and warmly spiced with a caramel-like sweetness.

These honey drop cookies are a throwback to a time before granulated sugar was cheap and plentiful. Honey is the only sweetener here, and it does things sugar can’t: it keeps the cookies soft and chewy for days, and it caramelizes around the edges during baking for a slightly sticky, almost toffee-like crunch.

The method is a little different from most cookies. You heat the honey first, then melt the butter into it while it’s warm. This isn’t just about combining them. Warm honey thins out and blends more evenly into the batter, and it helps the cinnamon and cloves bloom so their flavor is stronger throughout. Let the mixture cool before adding the egg, or you’ll end up with scrambled bits in your dough.

Chopped raisins get folded in last. Chopping them matters because whole raisins sink to the bottom of these small cookies. Cut them up and they distribute evenly, giving you a little burst of fruit in every bite.

Pro Tips

  • Oil your baking sheet well. Honey-based doughs stick more than sugar-based ones.
  • These spread quite a bit. Space them at least 2 inches apart on the sheet.
  • Pull them at 12 minutes if you want them soft and chewy. The full 15 minutes gives you crisper edges.
  • Store in an airtight container with a slice of bread to keep them soft. The bread absorbs moisture loss and keeps the cookies tender.

Variations

  • Swap the raisins for chopped dried apricots or dates for a different fruit flavor.
  • Add a pinch of ginger alongside the cinnamon and cloves for a spicier, more German-style cookie.

Directions

Heat honey.

Add butter. Add spices. Cool. Add egg. Sift flour, measure, and sift with salt and baking soda.

Add to honey mixture.

Add raisins.

Mix thoroughly. Drop by teaspoonfuls onto well-oiled baking sheet.

Bake at 400℉ (200℃). about 15 minutes.
