Heart Healthy Biscuits

I was out of shortening so I looked for a recipe that uses oil and I'm so glad I found this! For a treat, add a little sugar and chocolate chips. Yum!

473 ml all-purpose flour

15 ml baking powder

79 ml vegetable oil

1.3 ml salt

158 ml milk, skim

Directions

Preheat oven to 475 degrees F.

Sift flour, baking powder and salt.

Measure oil and milk into cup but don't stir.

Add all at once to flour mixture.

Stir with fork until mixture leaves side of bowl and forms ball.

Knead 10 times.

Roll out (¼ inch thick) and cut with floured glass or biscuit cutter.

Bake 10 to 12 minutes.

Make 1½ dozens.

Wonderful biscuits! I changed the recipe by using some whole wheat flour instead of all white flour (1 1/2 cups white and 1/2 cup whole wheat). I also added some lemon zest, orange zest, a few tablespoons of sugar, and some raisins. Delicious!

You DO realize baking powder has a boatload of SALT?

You can buy one that has no salt cost more but it has no salt

These do not really qualify as "Heart Healthy" considering every teaspoon of baking powder can range from 75 mg of sodium, to 300 mg or more. Plus there is an added 1/4 tsp. of actual salt, misleading title!

I would use canola oil it has less saturated fat.

Makes GREAT biscuits. As for the sodium content, I'm a heart patient as well, WIDOW MAKER SURVIVOR. You can purchase/use sodium free baking powder "HAIN" - it works fine. You can find it online. The only sodium you're getting in this recipe is from the 1/4 tsp which is 500 mg BUT REMEMBER you're making 12 or more biscuits. That's roughly 41 mg per biscuit.

They came out like rocks. The dough was hard and stiff

If you over mix the dough it makes the biscuits tough.

Mine came out unpleasantly dense. Im on a cardiac diet and was sooo hopeful. Did I knead too much? Not enough? Help!

Baking powder - check expiry date. Don't knead too much - oil from hands can affect the finished product.
