This golden corn relish is a sweet-tangy condiment simmered down with chopped tomatoes, green pepper, scallions, jalapeño, brown sugar, and dill vinegar until the liquid evaporates and the flavors concentrate.

The brown sugar and vinegar create a balanced sweet-sour base, while the jalapeño adds just enough heat to keep things interesting without overpowering the corn. Fresh dill gets stirred in at the very end, off the heat, so it stays bright green and fragrant.

Simmer uncovered and stir frequently during the 20 to 25 minutes of cooking. You want all the liquid gone so the relish is thick and scoopable, not soupy. Use a heavy, nonaluminum saucepan since the vinegar reacts with reactive metals and can give the relish an off taste.

Serve at room temperature alongside grilled chicken, burgers, hot dogs, or fish. It also makes a great topping for tacos or stirred into a grain salad.

Kitchen Tips

  • Use fresh corn cut from the cob when in season for even better flavor
  • Seed the jalapeño for mild heat or leave some seeds in for more kick
  • Stir frequently toward the end of cooking as the liquid reduces to prevent scorching

Variations

  • Add diced red bell pepper alongside the green for more color
  • Swap dill vinegar for apple cider vinegar if dill vinegar isn’t available
  • Stir in a pinch of cumin for a Southwestern twist
