1 hrsFive ingredients and zero fuss. Frozen mashed potatoes get microwaved, browned ground beef and onions go on top, and a layer of cheddar cheese melts over everything in the oven. It’s a stripped-down shepherd’s pie that skips the from-scratch steps without losing the comfort.
Draining the beef thoroughly after browning is the one step that makes or breaks this casserole. Greasy meat on top of mashed potatoes creates an oily, unappetizing layer. Pour off every bit of rendered fat before layering.
The potatoes go in first, the meat and onions second, and the cheese on top. That order matters because the potatoes need to be the stable base, not a soggy topping.
Kitchen Tips
- Brown the beef while the potatoes microwave. Both take about the same time, so you’re not waiting around.
- Break the ground beef into small crumbles while cooking for even distribution across the casserole.
- Drain the beef in a colander, then blot with paper towels for extra grease removal.
- Cover the casserole while baking so the cheese melts evenly without browning too much on top.
