SLICES SLICES BREAD
whole wheat or whole grain

TABLESPOONS ML BASIL PESTO
basil or any your favorite flavor *

EACH EACH CUCUMBERS
washed, peeled if needed, slice into 1/4-inch rounds

EACH EACH ROASTED RED BELL PEPPERS
slice into strips

EACH EACH ARTICHOKE HEARTS
marinated, drained and sliced *

EACH EACH LETTUCE LEAVES
torn into pieces, or any your favorite greens *

Directions

Spread 1 tablespoon of basil pesto on each slice of bread.

Top one slice with cucumber rounds, roasted bell pepper strips, artichoke hearts and lettuce.

Place the other slice on top, and press to form a sandwich.

Serve.
