Easy Greek Salad
Takes no time to make, and it comes out tasty and refreshing.
olive oil, extra-virgin
fresh, or to taste
salt and black pepper
torn into bite-size pieces
italian plum (roma) tomatoes
cut into chunks
peeled if desired, and slice into half moon slices
halved and thinly sliced
green bell peppers
slice into strips
pitted, sliced or whole
to serve, optional
In a small bowl, whisk together olive oil, lemon juice, salt and black pepper to taste until well blended. Set aside.
In a large mixing bowl, add lettuce, tomatoes, cucumber, red onions, green bell peppers, black olives and feta cheese.
Pour the dressing over, and toss until evenly coated and well combined.
Divide the salad between the two serving plates.
Serve the salad with bread if needed.
