Mayo gets a serious upgrade with curry powder, ground ginger, crushed garlic, and finely chopped hard-boiled egg. A hit of lemon juice and scallions rounds it out with brightness and bite.

Surround it with plump chilled shrimp and watch the bowl empty. Works just as well with a pile of your favorite crackers.

Pro Tips

  • Crush the garlic into a paste with the salt using the flat of your knife. It dissolves evenly into the mayo without leaving chunks.

Directions

Mix together thoroughly the mayonnaise, chopped egg and ginger.

Peel garlic and crush thoroughly with the salt (or mash garlic and mix with salt, or add separately).

Add garlic and salt, onion, curry powder and lemon juice, blend well.

Put in small bowl surrounded by critters.

Also good with crackers.
