Sliced green tomatoes layer over onions in a quick Bisquick crust, then disappear under a creamy blanket of mayonnaise and sharp cheddar that browns into a bubbling, golden crown.
The original recipe note is firm on one point: use real mayonnaise. Light or low-fat mayo separates and weeps under heat, leaving you with a watery pie. Full-fat mayo emulsifies with the melted cheese into a sauce that holds its body and slices clean.
Using very sharp aged cheddar is the move that makes this work. The green tomatoes’ acidity is intense, and only a strong, tangy cheese can match it without disappearing. Mild cheddar gets lost.
Lemon juice in the mayo mixture amplifies the green tomato’s natural tartness while balancing the cheese. Don’t skip it.
Forty minutes in the oven is the right minimum. You want the top fully golden and bubbling at the edges, not just heated through. That browning is where the depth comes from.

Directions
In a 9 inch dish, make a crust with Bisquick.
Layer onions; green tomatoes.
Mix mayonnaise, lemon juice, chives and cheese.
Pour into crust and bake at 350 degree F, until cheese gets bubbly and top browns, about 40 minutes or longer.
You can use other things besides chives, parsley, basil, etc. but you must use real mayonnaise.
