Ingredients

1 pound mushrooms
fresh, medium sized, stems removed
1 cup olive oil
1 medium oranges
grated zest of

1 medium lemon
grated zest of

½ cup orange juice
fresh
½ cup lemon juice
fresh
2 large garlic cloves
very finely chopped

2 teaspoons salt
2 teaspoons mustard seeds
2 teaspoons cilantro
finely chopped leaves

½ teaspoon cayenne pepper
*
½ teaspoon black pepper
freshly ground

Directions

Place mushrooms, oil, zests and juices in a non reactive saucepan over high heat.

Bring just to a boil and remove from heat.

Transfer mixture to a glass jar or bowl, and stir in garlic, salt, mustard seed, oregano, cilantro, cayenne, and pepper.

Allow to cool completely, then cover and refrigerate, stirring occasionally, for at least 24 hours before serving.

Drain mushrooms and serve.

Absolutely spectacular. Plump juicy, the citrous notes really come through with a barely detectable hint of heat. Will be making this again and again.
