Sometimes the best cookies come from the simplest recipes.

These oatmeal chocolate chip cookies use just nine ingredients you probably already have in the pantry. One stick of butter, a mix of brown and white sugar, an egg, some flour, rolled oats, and a full cup of chocolate chips.

No fussy chilling. No creaming for ten minutes. Just mix, drop, and bake.

The oats give each cookie a hearty chew while the edges go golden and slightly crisp.

Kitchen Tips

  • Swap the oats and salt for 3 packets of instant oatmeal if that’s what you have on hand. The flavored kind adds a nice twist.
  • Use softened butter (not melted) for cookies that hold their shape with a chewy center.
  • Pull them from the oven when they still look slightly underdone in the middle. They’ll firm up on the pan as they cool.
