If you’ve ever had a frosting flop on you, this one’s your new best friend. It’s a no-cook icing that comes together entirely in the mixer, and it’s nearly impossible to mess up.

Instant coffee and cocoa powder team up for a deep mocha flavor that’s more grown-up than your standard chocolate buttercream. The coffee doesn’t make it taste like a latte; it just amplifies the chocolate and adds a subtle bitterness that keeps things from going one-note sweet.

Whip it until it’s light and fluffy, then spread it thick on your favorite layer cake, cupcakes, or brownies.

Chef Tips

  • Dissolve the instant coffee in the milk before adding it to the mixer for even flavor distribution
  • Add the powdered sugar gradually or you’ll end up wearing a cloud of white dust

Directions

Beat together with mixer the egg, salt, cocoa and coffee.

Alternately add the milk and icing sugar and vanilla.
