Directions
In a medium saucepan over very low heat, melt chocolate chips, stirring constantly.
Remove from heat. Stir in vanilla wafers, ½ cup powdered sugar, yogurt, and almond extract; blend well. Stir in dates.
Refrigerate 10 minutes for easier handling.
Form mixture into ½ to 1 inch balls. Roll in powdered sugar, and place in a single layer in a large shallow container. Store covered in refrigerator.
TIP: One 10 oz package of vanilla milk chips can be substituted for the chocolate chips.
Substitute ½ teaspoon rum extract for the almond extract and 6 oz package dried apricots, chopped for the dates.
Prepare as directed above.
