Cheesy Turkey & Caramelized Onion Panini

Sliced turkey and Swiss cheese piled high with slow-caramelized onions and sweet mustard, pressed until golden on whole wheat bread. This turkey panini turns leftover turkey into a gourmet grilled sandwich.

Spanish onions get the full caramelization treatment: sliced thin, cooked low and slow with garlic, thyme, and a pinch of sugar until jammy and golden.
A splash of white wine vinegar at the end gives them a bright edge that cuts right through the richness.
Stack those sweet, sticky onions onto whole wheat bread with generous slices of turkey, melty Swiss, and a smear of sweet mustard.
Press it in a panini press or grill it in a skillet until the bread is crispy and the cheese is stretching.
Chef Tips
- Patience is everything with the onions. A full 20 minutes on medium-low turns them from sharp and raw to sweet and caramelized
- Butter the outside of the bread for the crispiest, most golden crust when grilling
- No panini press? A heavy skillet pressed on top of the sandwich in another skillet works just as well
- This works beautifully with leftover Thanksgiving turkey, deli turkey, or even rotisserie chicken

Directions
In a large nonstick pan or skillet, heat both oil and butter over medium-low heat.
Add onion slices, garlic, thyme, salt, pepper and sugar, cook and stir occasionally until onions are caramelized, 18 to 22 minutes.
Stir in white wine vinegar.
Spread unbuttered side of 4 of the slices with mustard.
Top with onion mixture and 6 ounces each turkey and swiss cheese.
Top with remaining bread, buttered side out.
Grill in skillet over medium heat, or in panini press, until browned and cheese is melted.
Serve warm.
