Awesome Candy Cane Christmas Cookies

These turned out perfect—crushed candy canes make them nice and crispy on the outside, with a soft melt-in-the-mouth explosion on the inside. I was really impressed a bit like shortbread with a minty twist.

Directions
Preheat the oven to 375℉ (190℃).
Cream the butter and confectioners' sugar until light and fluffy in a large bowl beaten on medium speed with an electric.
Add the egg, peppermint, and vanilla extracts and beat until well blended.
Gradually add the flour and salt; mix well.
Cover the bowl tightly with plastic wrap and chill for 1 hour.
Coat two baking sheets with nonstick cooking spray.
Mix well with the crushed candy canes and granulated sugar in a shallow bowl.
Shape the chilled dough into 1-inch balls then roll each ball in the candy cane mixture; place on the baking sheets and bake for 10 to 12 minutes, or until browned.
Immediately remove from the baking sheets and place on wire racks to cool.

These cookies are yummy, my kids could not stop eating them, they were so handy and the flavor was just soooo good.
