Had some fresh bell peppers, mushrooms, pizza sauce, scallions, and whole wheat tortilla, made up this Mexican Pizza for breakfast. Instead of mozzarella or Mexican cheese, I used Swiss cheese. The pizza came out super tasty and quite filling, and I also topped a pan-fried egg. Yum!

TABLESPOONS ML PIZZA SAUCE
or more as needed

SLICES SLICES SWISS CHEESE
tear or cut into small pieces, or shredded about 1/4 cup

TABLESPOONS ML SWEET BELL PEPPERS
green and/or red, chopped *

chopped

EACH MUSHROOMS, BUTTON
or cremini, quarted and sliced

chopped, or more as needed *

X RED HOT PEPPER SAUCE
or any hot pepper sauce, for serving, optional *

Directions

Preheat the oven to 425 degrees F.

Place the tortilla on a pizza pan or a baking sheet slightly coated with cooking spray.

Spoon the pizza sauce evenly over the tortilla. Place the cheese pieces on top of pizza sauce.

Arrange the bell peppers, mushrooms, tomatoes, and pickled jalapenos over the cheese.

Bake for about 10 minutes, or until the edges of tortilla start to become slightly brown, and the cheese has melted.

Remove from the oven, top with a pan-fried egg if needed, sprinkle with fresh cilantro and scallions.

Drizzle with a bit hot sauce if desired. Serve warm.
