with tender stems, steamed and chopped,

Directions

Beat the eggs in a medium bowl until well blended, mix in the bread cubes. Set aside.

In a 10-inch ovenproof nonstick pan, heat the oil over a medium high hight.

Stir in the onions and cook until the onions are soft, 4 to 6 minutes.

Stir in the broccoli and cook for another 2 minutes. Season with salt, black pepper and red hot pepper sauce if needed.

Pour the egg and bread mixture evenly over the vegetables.

Reduce the heat to medium-low, cover, and cook until the egg mixture is almost set, about 10 minutes. Sprinkle the cheese on top.

Preheat the broiler.

Place the skillet under the broiler about 2 inches apart, broil until the top is set and golden brown, about 2 minutes.

Watch carefully, do not let the top burn.

Serve hot with some chili sauce or red hot pepper sauce if desired.
