Is it possible to make this bread without eggs?

I think you can omit the egg. Maybe the bread would be slightly dense.

1/4 cup Sweetened condensed milk works wonderfully as an egg substitute. But it's closer to 3 1/2 cups flour.

Can this recipe be scaled to yield a 2lb loaf (i.e., 4 cups of flour & the rest scaled)?

I personally think that it is ok to scale to yield a 2Ib loaf. Because it is only one pound extra, and I think the bread machine should be able to hold these ingredients. Hope this helps!

This seems to be missing a few instructions but maybe just because I have an older bread maker.

What order do you put the ingredients in?
What cycle do you use on the maker? Basic? French? Sweet?

Just use the instructions for your machine. I always use 'dough' then bake it in the oven.

wet stuff (oil milk, water, eggs etc.) goes in first then dry stuff ( flours), and yeast on top of the dry stuff, away from the from liquids. Remember not to add strong spices until the machine beeps as they can kill the yeasts so the dough won't rise much or not at all.

I wanted a 2 lb loaf so I used:

1 1/2 packets yeast
4 cups regular flour
2/3 cup sugar
1/3 cup cocoa powder
2 large eggs
1/3 cup butter (room temperature)
1 teaspoon vanilla
1 1/4 cup milk (warm)

I put the warm milk and yeast in the pan first, with a bit of the sugar and let it sit a few minutes until foamy. Then I added the remaining ingredients and set my Cuisinart Bread Machine for: Rapid White Bread, 2 lb loaf, light crust. I added a half cup of mini semi-sweet chocolate chips at the mix-ins buzzer too.

Each packet in the strip is considered one package. Each package contains 1/4 oz. or 2 1/4 teaspoons of yeast. This is approximately 7 grams, or 11 ml. Hope this helps. Happy Baking :)

If you are using buttermilk, do you still need butter added to bread machine?

Yes, you do. Buttermilk is more like a cultured milk and doesn't necessarily replace the usage of butter. So you still need to add butter to the batter. Hope this helps, and Happy Baking :)

My machine is a pound & a half so what size is this recipe for & if a, 2lb can I cut ingredients in half for a 1 pnd loaf

I use a gluten-free bread mix. Can I simply add the sugar, cocoa and vanilla to that for chocolate bread?

I added 1/2 teaspoon of salt just because I have never seen a yeast bread recipe without salt. I added the ingredients in this order: milk, egg, butter, vanilla, sugar, cocoa powder, flour and my salt addition. Ten I made a well in the center and added the yeast. I baked on regular bread machine cycle. The bread rose well and had a very good texture. It satisfied my chocolate craving while being a lot better for me than a doughnut or piece of cake. It's not all that sweet, so I might consider upping the sugar to 3/4 cup. I ate mine warm out of the machine with honey butter.

35g of protein for one slice? There's not that much protein in the egg and milk for the whole loaf.

Look into getting conversion magnets for the fridge. I have my grandmother's and they help so much. Check Amazon for them as well.
