Best Baked Pasta & Cheese

1 Tbsp olive oil
5 Tbsp butter
3 Tbsp flour
1 1/2 cups half-and-half or milk
2 cups shredded cheese (use a blend of your favorites)
1/2 cup grated parmesan cheese
1/2 cup unseasoned bread crumbs
1 box short cut pasta, such as penne or rotini, cooked 2 minutes short of package directions, drained, and set aside

1/2 cup unseasoned bread crumbs

Directions
Put olive oil and 2 tablespoon butter in a large saucepan over medium heat. Once the butter is melted, whisk in 3 tablespoon flour. Cook for 2 minutes.
Whisk in half-and-half or milk. Add salt, pepper, and nutmeg. Keep whisking mixture until it becomes thick and bubbly.
Add 1½ cups shredded cheese. Once cheese has melted, fold pasta into sauce and then pour into buttered 9x13 baking dish .
Mix together parmesan and bread crumbs and sprinkle over pasta and sauce mixture. Sprinkle remaining ½ cup shredded cheese over parmesan/bread crumb mixture.
Cut remaining 3 tablespoon butter into 12 chunks and place over shredded cheese.
Bake at 350℉ (180℃) for 20 minutes.
