Directions

Brown the roast on all sides in a little bit of oil. Place in the crockpot. Add an onion, cut in about 6 to 8 pieces. Add spices (garlic, herbs, pepper). Cover with water. Set on High. Simmer for about 5 to 6 hours. Add potatoes (quartered), and other vegetables if desired the last 60 to 80 minutes.
