Arugula and Pear Salad with Grapefruit and Orange Dressing

 

Citrus dressing gives peppery arugula extra sweetness, a very good balance!

Ingredients

cup grapefruit juice
freshly squeezed
cup orange juice
freshly squeezed
4 tablespoons olive oil, extra-virgin
1 x salt
to taste

1 x black pepper
freshly ground, to taste

6 ounces arugula (roquette)
rinsed, dried and torn
1 each pears
cored and sliced
1 each sweet red bell peppers
thinly sliced

Directions

In a medium bowl, whisk together grapefruit juice, orange juice, olive oil, and salt until well blended.

In a salad bowl, add arugula, pear, and red pepper.

Drizzle dressing all over the salad, and toss to coat evenly.

Serve.
