This is a big-batch cookie recipe that yields over 100 cookies, built for holiday baking or filling the freezer. The standout technique is blending the oatmeal into a fine powder before mixing it into the dough. That oat flour disappears into the batter, adding flavor and moisture without the visible flakes. The cookies look like standard chocolate chip cookies but taste nuttier and chewier.

The triple chocolate hit is what makes these worth the effort. Chocolate chips stay as melty pockets, a grated Hershey bar melts into the dough creating thin ribbons of chocolate throughout, and together they deliver chocolate in two different textures. Three cups of chopped nuts add crunch and substance to every bite.

Six minutes at 375°F (190°C) is a fast bake. The cookies should look barely done when you pull them. They continue setting on the hot sheet and the short time keeps the centers soft and chewy while the edges crisp up.

Kitchen Tips

  • Blend the oatmeal to a true fine powder. Any visible flakes and you lose the seamless texture that makes these special.
  • Chill the dough before rolling into balls. The high butter and sugar content means warm dough spreads too fast in the oven.
  • Grate the Hershey bar on a box grater. Fine shreds distribute more evenly than chopped chunks.
  • Pull at 6 minutes even if they look underdone. They firm up on the sheet. Overbaking these is the most common mistake.

Variations

  • Use dark chocolate chips and a dark chocolate bar for a more intense, less sweet cookie.
  • Swap nuts for pecans or macadamia nuts for a different crunch profile.
