I had these for breakfast frequently when staying in Tlaqupaque, Mexico outside Guadalajara. Here's my version that recreates this local specialty. I haven't seen them anywhere else. Perfect for Cinco de Mayo.

A great summer sandwich! Tasty and light, grilling gives the vegetables nice smoky taste. A little bit garlic and lemon juice brighten up the mayonnaise; feta cheese gives the cheesiness and slightly saltiness, which is a great additional topping of the sandwich.

Vegetable Curry recipe
About half of the beans I used were chili beans. And I used a Guinness beer. I (roughly) seeded the jalapenos and this was surprisingly still spicy. A cheap cut of beef works quite well; the beef chunks get so tender and this is an overall delicious dish. I froze half of it.
Trust me; take the time to make fresh salsa. The jarred salsas can't even come close to the flavor of fresh salsa.
