I had these for breakfast frequently when staying in Tlaqupaque, Mexico outside Guadalajara. Here's my version that recreates this local specialty. I haven't seen them anywhere else. Perfect for Cinco de Mayo.

The first time I tried this version of the recipe, I ate it for all three meals. LOVED it! If you have leftovers, toss in a can of tomatoes, a can of white beans, and whatever veggies you have in the fridge, and make yourself a tasty soup.

This easy to make recipe is loaded with flavors, want a lighter and tasty nachos, try this one, and you will love it.

A great summer sandwich! Tasty and light, grilling gives the vegetables nice smoky taste. A little bit garlic and lemon juice brighten up the mayonnaise; feta cheese gives the cheesiness and slightly saltiness, which is a great additional topping of the sandwich.

For brunch recipes; this is one of our favorites. An excellent way to use up leftover brown rice with eggs, cheese, and veggies for a quick healthy breakfast.

About half of the beans I used were chili beans. And I used a Guinness beer. I (roughly) seeded the jalapenos and this was surprisingly still spicy. A cheap cut of beef works quite well; the beef chunks get so tender and this is an overall delicious dish. I froze half of it.

Beer pairing suggestion: American India pale ale or amber ale. The Stone World Bistro & Gardens, in Escondido, California, serves wood-grilled trout with black mission fig butter to make it taste even milder and sweeter. Mission figs are available in the dried fruit section of most large supermarkets. Untreated wood planks for grilling are available in grilling and barbecue sections of hardware store s as well as some supermarkets.
