Chuck's Barley-Mushroom Winter Borscht recipe

The roast came out so tender and succulent. We used organic beef stock, which really added lots of great flavour. Had it with mashed potatoes and homemade dinner rolls. What a treat!

This dish is best at room temperature, although it is good hot or cold also. I have given just the basic recipe; you can add all kinds of things, like corn, fresh tomatoes, cilantro, scallions, blanched chayote squash, etc.
