Dolphin fish, AKA Mahi mahi served on top of a red onion couscous with a fresh Papaya Avocado salsa. Wonderfully presented and delicious.
No country of origin, but I'm betting on Vietnam this time, mainly from the dip.
Note: The sauce can be used to marinate chicken, pork, ribs, or a meaty fish such as swordfish before grilling.
This is an outstanding dish! I followed it exactly and it was just superb.
