So quick and easy to put together, and it tastes delicious with a good amount of flavorful sauce that's perfect with a bed of rice. Don't have Chinese cabbage? Use bok choy or other similar leafy greens, or even broccoli instead.
This is an authentic family recipe that my mother
taught me in 1950 in New Orleans. It makes a great
dinner party main dish. Like chinese food, it is long
on chopping and assembling, but goes together and
cooks rather quickly.
Made this breakfast casserole a while ago, and it wasn't Mother's Day :)
The casserole turned out quite good, especially considering a reasonably low fat dish. Not only your mother will be impressed, this casserole is also an excellent breakfast or brunch at any occasions.
