Instead of roasting a whole chicken, I only cooked one skin-on and bone-in chicken breast. Used the same ingredients, browned the chicken breast in a hot pan for about 4 minutes on each side until nicely browned. Then baked in the oven until the internal temperature of the chicken breast reached 165 degrees F. Then let it rest for about 10 minutes, and it was juicy, tender and packed with flavour.
Our dinner yesterday, very cheesy and tasty. Loved the idea of using shredded potato as the crust, and the cauliflower-onion mixture was absolutely delicious. I browned the onions, which made the filling more flavorful; I also added a few dashes of red hot pepper sauce into the crust mixture to give a bit zing. Definitely a keeper and will be making it again!

Made this recipe for lunch today, and these quesadillas turned out cheesy and tasty, I used the fresh basil, parsely and dried oregano, I also put some minced garlic before I spread mixture, and at the end of the baking, I turned up the oven to 400 F degree, gave the tortillas a little bit brown on the edges, but watch them carefully, only took 2 to 3 minutes, and result was outstanding, I think this is a very flexible recipe too, you can put whatever vegetables you want, the flavour should be still excellent!
