Ingredients

1 pound pork loin
boneless, trimmed of all fat and sinew
1 basil
bunch (2 cups leaves)

4 scallions, spring or green onions
3 tablespoons peanut oil
2 cloves garlic
peeled and minced
3 hot chili peppers
red or green, hot, thinly sliced, to taste (optional)

2 teaspoons fish sauce
*
2 teaspoons soy sauce, tamari
1 teaspoon sugar
¼ cup chicken broth
or water

Directions

Thinly slice the pork across the grain.

Wash, dry and stem the basil.

Mince the white part of the scallion.

Cut the green part into 1 inch pieces.

Heat the wok over a high flame.

Swirl in the oil and heat almost to smoking.

Add the garlic, chilies and white part of scallions and cook for 10 seconds.

Add the pork and stir fry for 1 minute.

Add the fish sauce, soy sauce, sugar, stock and green part of scallions and bring mixture to a boil.

Stir in the basil and cook for 20 seconds or until the leaves are wilted and the pork is cooked.

The dish is supposed to be soupy. Serve at once with rice or noodles.

A very tasty low fat dish. I used low sodium soy sauce and chicken broth. I only used 2 green chilies to reduce the heat. Served over jasmine rice.

So simple and so quick to prepare and tasted great. Very authentic and just the right balance of flavors. Slightly sweet, a hint of salty and a bit of spicy with lots of basil notes throughout. I used pork loin chops trimmed of all fat so it's not only tasty but low in fat too! Great for a quick weeknight meal.
