Ripe bananas bring all the sweetness and binding power, holding together rolled oats, chopped nuts, and plump raisins into chewy little cookies that come together faster than you can preheat the oven.
They’re the kind of wholesome snack you can feel good about handing to kids, tossing in a lunchbox, or grabbing on your way out the door.
The whole batch of 3 dozen takes about 25 minutes from start to finish.
Kitchen Tips
- Use the ripest bananas you can find. Brown-spotted ones are ideal because they’re the sweetest
- Press each cookie down gently with a fork so they bake evenly and get golden edges
- These are soft cookies, not crunchy. For crispier results, flatten them thinner before baking
- Store in the fridge since there’s no sugar to act as a preservative
