Ripe bananas bring all the sweetness and binding power, holding together rolled oats, chopped nuts, and plump raisins into chewy little cookies that come together faster than you can preheat the oven.

Kitchen Tips

  • Use the ripest bananas you can find. Brown-spotted ones are ideal because they’re the sweetest
  • Press each cookie down gently with a fork so they bake evenly and get golden edges
  • These are soft cookies, not crunchy. For crispier results, flatten them thinner before baking
  • Store in the fridge since there’s no sugar to act as a preservative

Directions

Combine bananas, oil and vanilla.

Stir in oats, nuts and raisins.

Drop by tablespoons onto greased cookie sheet.

Press down lightly with fork.

Preheat oven to 350℉ (180℃).

Bake 10 to 12 minutes until golden brown.
