This strawberry spread is a lighter, fresher alternative to traditional jam. No pectin, no mountains of sugar, and no long boiling. Just mashed strawberries mixed with a small amount of dissolved gelatin, orange juice and zest, and a surprising pinch of coriander. It sets in the fridge into a soft, spreadable consistency that tastes like actual fruit, not sugar with fruit coloring.

The gelatin does the thickening work that pectin and sugar would normally handle. Just one teaspoon dissolved in orange juice is enough to set a cup of strawberry puree into a spreadable texture without making it bouncy or rubbery. The result is looser than store-bought jam, more like a thick fruit sauce that holds its shape on toast.

Orange zest slivers add a citrus brightness that amplifies the strawberry flavor. The ¼ teaspoon of ground coriander is the unexpected ingredient that makes this spread interesting. Coriander has a warm, slightly citrusy, floral quality that complements strawberries beautifully without announcing itself. Most people will just think the strawberries taste unusually good.

Six packets of sugar substitute keep the sweetness gentle. The fruit itself provides most of the flavor.

Kitchen Tips

  • Use ripe, in-season strawberries for the strongest flavor. Out-of-season berries are watery and bland, and no amount of sugar fixes that
  • Dissolve the gelatin completely before adding to the fruit. Any undissolved granules will create rubbery spots in the spread
  • Store in a glass jar in the refrigerator. Use within one week since there are no preservatives
  • The spread thickens more as it chills. If it’s too firm after setting, stir it to loosen the texture

Variations

  • Use raspberries or blueberries instead of strawberries for a different berry spread
  • Add a tablespoon of balsamic vinegar for a sophisticated strawberry-balsamic spread
  • Replace coriander with a pinch of black pepper for a subtly spicy strawberry version

Directions

In small saucepan, sprinkle gelatin over orange juice.

Let stand 1 min.

Heat over low heat until gelatin is dissolved and mixture comes to a boil.

Remove from heat and stir into strawberries.

Add remaining ingredients and stir to blend.

Refrigerate until firm, 3 to 4 hours.

Best when used within one week.
