Strawberry Cheesecake Ice Cream
A delicious creamy ice cream with ripe strawberries and graham cracker pieces. A delightful summertime treat!
Ingredients

cream cheese
regular or light, softened |

sugar

sour cream
regular or light |

1 | cup |
light cream (half&half)

1 | tablespoon |
lemon juice

1 ½ | teaspoons |
vanilla extract

strawberries
fresh, cut in half; quartered if large |

graham crackers/wafers
broken into small pieces (not crushed) |

Directions
In a large bowl, beat together the cream cheese and sugar until light and fluffy/creamy. With mixer on low, add the sour cream, light cream, lemon juice and vanilla extract; gradually increase speed of mixer. Beat until smooth. Add the strawberries; beat until the strawberries are mostly broken up, leaving a few chunky pieces. Cover and refrigerate mixture for at least 2 hours.
With ice cream maker running, pour mixture through top feed hole and freeze according to your machine’s directions. Add the graham cracker pieces during the last 5 to 10 minutes of freezing (freezing time should be 30 to 45 min. total).
Transfer to airtight container(s) or serve immediately.

What? Strawberry cheesecake ice cream? This sounds insanely delicious :) Three of my favorites, my mouth is salivating just by looking at these photos and reading ingredients... Thanks for sharing this decadent dessert recipe with photos that makes my palate scream :D
