Assemble this the night before and wake up to brunch practically making itself.

Cubed bread, sliced SPAM, and melty Velveeta get layered in a baking dish, then soaked overnight in a simple egg and milk custard spiked with dry mustard.

Pop it in the oven the next morning and let it bake until golden and puffed.

It feeds six hungry people with zero morning stress, which is exactly what a weekend brunch should be.

Chef Tips

  • Use day-old bread for better absorption. Fresh bread can get too soggy overnight.
  • Let the casserole rest 10 minutes after baking so it sets up and slices cleanly.
  • Swap in sharp cheddar for Velveeta if you want a more pronounced cheese flavor.
