Ingredients

10 medium red skinned potatoes
cooked, in jackets

cup salad dressing, italian
1 ½ cups celery
sliced
1 cup scallions, spring or green onions
sliced
4 each egg, hard-boiled

½ cup sour cream
1 cup mayonnaise
1 ½ teaspoons horseradish sauce
1 teaspoon prepared mustard
1 ¼ teaspoons celery seeds
cup cucumbers
diced
1 x salt and black pepper
to taste

Directions

While potatoes are warm, pour on the dressing.

Chill 2 hours.

Add celery and onion.

Add the egg whites, chopped.

Sieve egg yolks, Combine with mayonnaise, sour cream, horseradish, mustard, and celery seed. Chill 2 hours and add diced cucumber.
