Frisee or mixed greens get tossed with diced ham, sweet fresh corn, juicy tomato and whole-grain croutons, then dressed in a tangy sour cream vinaigrette spiked with smoked paprika.

That smoked paprika is doing all the heavy lifting here, turning a simple dressing into something with real depth and warmth.

Light enough for a weeknight side, hearty enough to hold its own as a quick lunch.

Kitchen Tips

  • Use smoked paprika, not regular. Regular paprika adds color but almost no flavor. Smoked paprika is what gives this salad its name and its soul.
  • Add the croutons right before serving so they stay crunchy. Dressed croutons go soggy fast.
  • Frozen corn works in a pinch. Thaw it under warm water and pat dry before tossing in.

Directions

Whisk sour cream, vinegar, paprika and salt in a large bowl.
