Rotel salsa is the dip equivalent of a magic trick. A can of Rotel tomatoes and green chiles already contains the seasoning, the chile heat, and most of the work, so the recipe just builds on it with fresh ingredients to make it taste homemade rather than canned.

A chopped fresh tomato is the upgrade that elevates this from canned to legit. The fresh tomato adds juicy texture and bright acidity that the canned version can’t match alone. Scallions and minced garlic deepen the savory base, and a squeeze of lime juice brightens everything.

Five minutes of chopping and stirring, and you have a salsa that holds its own next to chip-and-dip spreads at any party. The Rotel does the heavy work while you take the credit.

Pro Tips

  • Drain the Rotel partially. Too much canning liquid makes the salsa watery; none at all and you lose the seasoning that comes with the juice.
  • Let the salsa sit at least 15 minutes before serving. The flavors meld and the raw garlic mellows into the mix.
  • Add a small handful of chopped fresh cilantro right before serving for the herb finish that takes this from good to crave-worthy.

Variations

  • Use the spicy Hot variety of Rotel and add fresh diced jalapeno for serious heat.
  • Stir in a tablespoon of finely diced red onion or shallot in addition to the scallions for more bite.
  • Add a half cup of corn kernels and a quarter cup of black beans for a heartier salsa that doubles as a taco topping.
