27 minWhen you need four dozen spiced cookies and you needed them yesterday, this recipe is your answer. An oatmeal cookie mix does the base work while you layer on cinnamon, nutmeg, and cloves for a warm, holiday-ready spice profile.
Plump raisins and chopped nuts get folded in last, giving every cookie little surprises of chewy sweetness and crunch. The drop cookie method means no rolling, no cutting, no chilling. Just scoop and bake.
The spices here are stronger than what’s already in the oatmeal mix, and that’s the whole point. You want that hit of clove and nutmeg to come through clearly, not just lurk in the background. These should smell like a spice cabinet when they come out of the oven.
Pro Tips
- Don’t skip the cloves. Even half a teaspoon makes a noticeable difference in depth of flavor
- Drop by teaspoons, not tablespoons. These spread as they bake
- Pull them at 12 minutes for a softer cookie, 15 for a crisper edge
- Cool on the baking sheet for a couple minutes before transferring to a rack
